Programs in the U.S. revolve around forming well-rounded students with classical and contemporary literature, developing the students' ability to analyze and be critical, and even train them with communication skills for writing academic articles that most of the times rely on interviews and previous materials.

Ana didn’t do any research because she didn’t know she was giving the interview until a few minutes beforehand. However, you’re right that she ought to be prepared to give an interview and think critically about the answers she receives from Christian Grey so that she can formulate more questions.

Either Anastasia’s a very bad student, or E.L. James neglected to do or ignored research about what literature students learn and what’s expected of them.
